5 Seattle Capitol Hill Breweries to Put on Your Bucket List

Craft breweries are taking over the nation and some of the most popular started right here on Capitol Hill. Grab a 6-pack of experimental releases from your favorite brewery or venture out to a new and exciting spot to taste what Seattle’s beer scene is all about. 

 

Elysian Brewing Company

Elysian isn’t your little craft brewery anymore. Once word got out about their juicy IPA’s, sippable pilsners, and rich stouts, everyone wanted a taste. You’ll find these beers in taprooms, restaurants, and liquor stores all around the country and it all starts right here in Seattle. Inside their original brewery you’ll find over 20 different taps ranging from their tried and true favorites to new experimental releases. If you can’t stop in, grab a six pack to-go and enjoy it anytime. 

Optimism Brewing Company

They say it's almost impossible to have a bad time at Optimism Brewing Company. This cheery craft brewery integrates optimism into every aspect of their company. Their outdoor beer garden is the perfect place to stop in for a brew after a long hike or before your dinner reservations. Each beer is made with love and care. The result? Smooth and sippable drinks with joyful names like Raspberry Superfunk, Sweater Weather, Moxee, and Heliotropic. 

Redhook Brewlab

Redhook is another brewery that grew from a small batch operation to a name brand craze. While they have multiple breweries and tasting rooms around the city, the Brewlab on Capitol Hill is an all-time favorite. This brewpub is especially reserved for innovation. Inside, brewery experts are always working on the next big release. Right now, it’s the Washington Native series, a collection of beers made exclusively with Washington sourced ingredients. Stop by for takeout draft beer and tasty pub food and plan a trip later to take a tour. 

 

Standard & Sovereign Brewing

These sister breweries, both situated in the Judkins Park neighborhood, are up and comers in the brewing community. Standard Brewing has long been known for both their old world styles of beer and their funky experimental brews. Recently, they have decided to split the two sides of the company into sister breweries, each focusing on their own flavor. Standard will continue to produce IPAs, stouts, and lagers with precision and science dating back hundreds of years. Sovereign on the other hand will be a wild playground of experimentation, playing with unique ingredients and creating breakthroughs in the craft brewery world. You’ll be able to find guest taps at each taproom, but each with their own vision. 

 

Outer Planet Craft Brewing

Outer Planet beers are deliciously out of this world. This smaller brewery is everything special about craft brewing. Small batches make for unique brews that are flavor forward. Every time you go you’ll find a new experimental release. Sit back and enjoy a beer on their outdoor patio or pick up a pack to-go. Dive into the Supernova IPA, the Big DIPA, One Small Step for Mango Sour Ale, Planet of the Apricots Sour Ale, or AAAAAAAHHHH!! Amber Ale. Fun names, colorful can artwork, and delicious beers. What more could you ask for!
